Hey all! I'm McCall Ashton. I decided to make shredded chicken tacos, because who doesn't love tacos? I love this recipe because its very tasty and very easy to make. You can also make it your way! Preparation time is about 20 minutes. Only because you have to boil the chicken. Luckily, while that is cooking you can prepare the rest of the meal.
Taste:
Delicious! What I love about tacos is the ingredients. The fresher the better! I like mixing hot and cold temperatures when I cook. Adding cold avocado to a hot taco is amazing!
Ease of preparation:
Tacos are incredibly easy to make. While you are cooking the meat you can chop up peppers (sauteed) , and cut up an avocado. You can also heat up the corn tortillas.
Ingredients:
Shredded Chicken (boiled)
Corn tortillas
Green pepper
Red pepper
Avocados
Lime
Cumin (seasoning)
Chili pepper (seasoning)
Directions:
Bring water to boil. Add chicken breast. Cook for about 20 minutes or until chicken is no longer pink in the middle. Chop up peppers and saute. Cut up avocados and smoosh with a fork. Heat up corn tortillas. Once chicken is done add your desired seasonings. Volia! You can put together your tacos! Add a squeeze of lime to each taco for a hint of zest.

Why are these nutrients important?
Protein: Chicken is low in fat high in protein. Protein helps boost your metabolism and regulate your appetite and makes you feel fuller longer.
Fiber: Corn tortillas have more than twice the fiber flour tortillas have. Avocados are also loaded with fiber.
Vitamins: Bell peppers have a lot of Vitamin C which helps with your immune system. Bell peppers so have Vitamin E which helps you have clearer skin.
**I chose to substitute flour tortillas for corn tortillas to make them have more fiber and less sugar and fat. Using smooshed up avocados instead of cheese (which is high in saturated fat) is tasty and a great alternative. I also squeezed some lime on top for a little zest.
I consider this a healthy recipe. You are getting much need protein, fiber and vitamins. Not only is it easy to make the ingredients are cheap and you can make in larger quantities for weekly meal preparations. If you are a busy college student with little time, and little money this a great health meal.

I’m Shaun Schofield and I decided to make the chicken tacos. In my diet analysis, I found that I needed more vegetables in my diet. I would make this recipe again. I made the recipe easier to make because I used a rotisserie chicken. It was easy in that aspect and instead of corn tortillas I used flour because they taste better. I added lettuce to add more vegetables. In the guacamole there are tomatoes and avocados also. I used the basic recipe that McCall posted, but I changed a few things so it would accommodate to my diet and needs. The taste was amazing also! I feel like I would cook it again because it was good, healthy, and fast!
