Hey guys! My name is Riley, and I have the best snack/meal to start your day! I call it: Guacamole Toast. I love this because 1) It's doesn't require a lot of ingredients 2) It's nutritious 3) Prep time is freaky fast!
We've all had guacamole and chips before, but imagine this on toast. Preparing to make it is easy. The ingredients include:
- 1 Avocado
- 2-3 Tablespoons Salsa
- 2 Teaspoons Lemon Juice (Add more for flavor)
- 2 Teaspoons Salt (Add more for flavor)
- 2 Slices of Bread
Simply mix all (excluding the bread) together in a bowl. Toast the bread. Use the guacamole to spread on the toasted bread.....and then...you stuff ;)
I love this meal mostly because of the nutritional value. Avocados are known for being nutrient dense, which means they are loaded with vitamins and minerals. Avocados contribute nearly 20 vitamins, minerals and phytonutrients, including 4% of the recommended Daily Value for vitamin E, 4% vitamin C, 6% folate, 8% fiber, 2% iron, and 4% potassium. These are all important for one's overall health and wellness and it provides a good variety for a healthy diet.
The lone negative, that one could say, would be the salt and salsa. These can be high in sodium, based on the amount being used. But, if used in moderation, they shouldn't cause any problems and they provide a nice flavor to a healthy snack!
If there's any ingredient, food group, or nutrient that is missing, it would have to be Vitamin D. In other words, there's a lack of dairy in this meal. But, it can be hard to incorporate every food group in one meal (unless you're blending everything together...and let's be honest, who has $$$ for a Blendtec??? ;) ). But, this snack makes up for the lack of vitamin D as it is still packed with many other key nutrients.
