Vegetarian Chili

I love this recipe because it is super easy to make and you can modify it to what your favorite tastes are. The recipe all together takes about 55 minutes: 25 minutes to prep time including cutting any vegetables that you would like to put into it, mincing garlic and preparing seasonings. Then it takes 30 minutes to cook all of the ingredients down to where there flavor is best.

Taste
I love chili, the taste is always good in my opinion but I also like that you can add different kinds of seasonings to change it up for different seasons as well. Also the vegetables you add can go along with whatever season you are cooking in because you can use the vegetables that are best in that season. 

Preparation
The preparation is very easy to do. You don't need to know how to really cook as long as you know how to cut some vegetables and pour in cans of beans, tomatoes, corn and anything else you like you will be prefect for this recipe.

  1. I absolutely love this recipe! I while I was cooking this chili I was worried about how my husband and our little ones were going to react to all of the vegetables along with the tomatoes. Having my family have any types of tomatoes is a challenge that has not been easy to achieve. I made this today or my family and my husband loved it because the tomato taste was almost covered with all of the spices and juices from the other vegetables. Thank you for posting this. This will definitely be a re-occurring dish within our home! One my mother in law approves of!

  3. Vegetarian Chili

    The other recipe I tried was the vegetarian chili that Megan Hansen posted. I chose this recipe because in my diet analysis I realized that I need to eat more vegetables and a bigger variety of vegetables. This recipe is like entirely vegetables so I thought it would be perfect.

    Honestly I am not a big fan of chili but this was more like a stew in my opinion, I liked it! I haven’t made too many dishes like this but I would make it again. It makes a lot and you can eat it for a couple of days. Leftovers are awesome when you have busy days with class and school.
    The preparation is pretty easy, I have terrible knifes so cutting up all the vegetables did take a while. I would also use different seasonings. The basil and oregano were ok but I would like to see how different seasoning would taste. Overall a tasty and easy recipe I would make again!
