Scrambled Egg Muffins


Hello! My name is Trevor Taylor. I am always looking for good tasting, healthy breakfast foods to eat instead of sugary cereal. This is one of the recipes that I found and that my family uses a lot. It is more filling and a lot more healthy than a bowl of cereal. It's really cheap and very easy to make!

Taste: The taste is great! It is like a breakfast burrito without the tortilla. It's also easier to eat because it doesn't fall apart.

Ease of Preparation: This meal is very easy to prepare. All it takes is cooking the sausage and mixing everything together before putting it into the muffin tins. Other than cooking the sausage, it takes about 10 minutes to prepare. Makes 12 muffins.

Ingredients:
1/2 pound sausage
12 eggs
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese

Directions:
1. Preheat oven to 350 degrees. In a large skillet, cook sausage over medium heat until no longer pink; drain.
2. In a large bowl, beat eggs. Add onion, green pepper, salt, garlic powder and pepper. Stir in sausage and cheese.
3. Spoon by 1/3 cupfuls into muffin cups coated with cooking spray. Bake 20-25 minutes or until a knife inserted near the center comes out clean.

-133 Calories
-10 g fat (4 g saturated fat)
-224 mg cholesterol
-268 mg sodium
-2 g carbohydrate
-trace fiber
-9 g protein

The best thing, to me, about this recipe is that it is a great source of protein. It's a great way to start off the day with energy and have a healthy, filling meal. There aren't many calories and this is a good source of vitamins and minerals. Eggs provide many vitamins and minerals that our bodies need including vitamin B 12, vitamin D and biotin. The only downside to this recipe is that there is more fat than some recipes from the sausage but it is still a great source of protein.
