I made Chicken, Broccoli and Rice Casserole for this assignment. I liked that this meal was cheap, simple, filling, leaves left overs and doesn’t require many dishes to later wash. There wasn’t much taste besides broccoli and cheese though, it was pretty bland. The casserole was very easy to prepare; there’s few ingredients and doesn’t take much time to cook. The ingredients include: chicken, broccoli, white rice, cheese, Healthy Request cream of chicken, mayonnaise, corn flakes and margarine. Chicken contains macro nutrients, such as protein, cholesterol and fat. Protein builds and repairs out tissues, makes enzymes, hormones, and is an important building block of bones, muscles, cartilage, skin and blood. Broccoli is a good source of vitamin C, K, A, E, potassium, folate, calcium and much more. Folate-also known as vitamin B9-converts carbohydrates into energy. It also is needed for formation of red and white blood cells in bone marrow. Cheese provides calcium, which reduces risk of stroke, preserves bone mineral density and lowers blood pressure. White rice is refined grain, not whole so it’s not that healthy. Mayonnaise and margarine are both fat which we need in small amounts. I consider this meal healthy because it has many of the main food groups. It could be more balanced, and it’s missing fruit. You could maybe make a healthy dessert with fruit to couple this dinner.
