Taste: Personally I think this recipe is super yummy! I love fresh veggies on a salad and the chicken adds just that right amount of flavor. If you aren't a veggie person this might not be the one for you.
Ease of Preparation: I would say definitely easy! Even if you are baking your chicken you just need to shred it which doesn't take much more time. I used rotisserie chicken... quick easy and yummy! The rest is chopping. Why the specific nutrients are important (e.g. what functions do they perform in your body?): One thing I absolutely love about this recipe is you have... Dairy, Veggies and even some grains! Even though it's not in the greatest form. But the veggies like avocados are loaded with vitamins and potassium which is good for your blood pressure. Lettuce helps fill you up but keep you lean! It's loaded with the good kinds of fats and a lean meat. It's all around good for you!
Any negative aspects?: Well maybe the ranch, cheese and chips... although they do have some nutritional benefit they have fats that aren't necessarily the best for you! But they are in really small quantities so that makes a big differences. Maybe a little lower on the sodium side.... whoops!
What important nutritional food groups are missing?: I think it could definitely use more grain and maybe a couple more veggies like peppers. But you are looking at a salad loaded with protein and vegetables that are great for you. I would definitely recommend having some fruit on the side though!

Ingredients!
5 oz of shredded chicken breast (I used rotisserie chicken plain! skinless)
1 Head of romaine lettuce chopped
1 Can of reduced sodium black beans (Bush's)
1 Can of sweet corn
1 Cup of chopped tomatoes
2 Chopped medium avocados
1/4 Cup chopped cilantro
4 oz of White Tostitos crunched up to go on top!
8 Tblspoons of Hidden Valley Light Ranch! (I definitely used more on mine... don't judge its bad for you!)
4 oz of Cache Valley Medium Cheddar shredded.
Layer started with the lettuce, beans, corn, tomatoes, avocados then chicken breast, cilantro, chips, cheese and ranch! Maybe throw on a little hot sauce if you want that extra kick without sacrificing calories!

P.S. I didn't read clearly I was suppose to be in the picture! Oh well hopefully this salad is good enough! :) It was DELICIOUS!
